SWEET CORN

I know, I know. “That’s just weird,” you’re thinking. Not really. Creamed corn is a roux of butter and flour combined with cream, sugar, a dash of salt, and corn. Sweet corn sherbet is the same thing minus the butter and flour. That said, you’ll swear it has butter in it. Pairs well with Citron Vert and a dusting of Tajin®.

Ingredients: corn milk, water, sugar, heavy cream (heavy cream, skim milk, carrageenan), lemon juice, kosher salt
