LILIKOI
I first tasted passion fruit–lilikoi, in Hawaii–when a friend and I tied for best cakes in a class in culinary school. I prepped a cake using a key lime buttercream, he had a filling of passion fruit curd. I instantly fell in love. Turns out it, too, has citric acid. No wonder I love it! Pairs well with Claireberry, Walter’s Bliss, and all citrus flavors.
Ingredients: water, sugar, passion fruit, heavy cream (heavy cream, skim milk, carrageenan), lemon juice, kosher salt
